Great article! The only thing I must correct you on is that the correct and standard used by the shear industry is that we HONE and not grind to accomplish proper sharpening of shears. As far as the hardness scale you spoke of is called "Rockwell Hardness Scale", the steel used in the manufacture dictates the hardness. Great educational article!
